Roasted Garlic-Potato Soup

Ingredients:

cup

fat-free milk

1 1/2

cup

water

   

1/2 package roasted garlic instant mashed potatoes

1

cup

reduced-fat sharp cheddar cheese-divided

1/4

tsp

freshly ground pepper

 


Cooking Instructions:

  1. Combine milk and water in a large saucepan: bring to a boil.
  2. Remove from heat.
  3. Add potatoes and stir with a wire whisk until well blended.
  4. Add 3/4 cup cheese, stirring until cheese melts.
  5. Sprinkle evenly with remaining 1/4 cup cheese and pepper.
